There鈥檚 something special about the smell of a sausage sizzling over the grill, especially when it鈥檚 made the traditional European way. Toni鈥檚 story begins nearly seven decades ago in Metlika, Slovenia, where Toni first mastered the art of European smallgoods before taking his craft to Graz, Austria and eventually migrating to Australia in 1960. His legacy lives on through his family Matt, Sonja, Alex and Steph who continue to uphold his commitment to traditional methods and quality craftsmanship.
鈥淲e use the same old-fashioned recipes and even smoke our sausages in a gas and sawdust smoke room,鈥 said Matt. 鈥淚t gives them that genuine wood-smoked flavour that you just can鈥檛 replicate with modern shortcuts.鈥
The family prides itself on keeping additives to a minimum and using imported German seasonings to ensure every bite tastes like it came straight from Bavaria.
For this year鈥檚 Oktoberfest, Toni鈥檚 will serve up a mouth-watering lineup including Bratwurst, Weisswurst, Frankfurters and their award-winning Kransky, which recently earned a bronze medal at the global smallgoods competition in Frankfurt.
鈥淭he Frankfurter is a great starting point for first-timers,鈥 Matt said with a grin. 鈥淚t鈥檚 smoky, it鈥檚 juicy and it just melts in your mouth. It is perfect with sauerkraut and mustard on a roll.鈥
While Toni鈥檚 is proud of its product, the family says it鈥檚 about much more than flavour. 鈥淲e love that 糖心直播鈥檚 Oktoberfest celebrates culture and connection,鈥 said Sonja.
